You do not HAVE to choose a class, but if you wanna recieve missions, then you must choose a class.

Gangbanger - Gangbangers or gangstas are involved in streetlevel crimes such as carjacking, drug dealing, mugging and more. Gangbangers care only about themselves, their gang and their turf. Violent turf wars often occur between rival gangs as they fight to take control of the 'hood. Gangbangers usually obtain their weapons from back alley arms dealers and on occasion work for groups such as the Columbian Cartel by distributing their drugs. Carl "CJ" Johnson is an example of a gangbanger.
Gangster - Gangsters come in a variety of flavours; Columbian Cartel, Triad, Yakuza as well as the Italian and Russian Mafias. The aforementioned organisations are at the top of the criminal food chain. It is not uncommon for gangsters to run a city even if law enforcement agencys and politicians are reluctant to admit it. Gangsters are involved in the smuggling of arms, drugs and women for prostitution rings. These organisations often collect "protection money" from the businesses in the areas they operate. Tommy Vercetti and Toni Cipriani are examples of Gangsters.
Freelancer - Freelancers care only about themselves and take jobs from whoever is offering the most money. Freelancers usually have to supply their own weapons but on occasion they are given a weapon with which to perform their latest task. Claude Speed is an example of a freelancer.
Vigilante - Vigilantes take it upon themselves to act outside the law in order to hunt down and kill known criminals because they feel that the law is inadequate in dealing with criminals by itself. Vigilantes have to supply their own weapons often salvaging both weapons and ammunition from the corpses of criminals he or she has killed. Despite the fact that vigilantes act outside the law, police officers are reluctant to take action against them because they agree with what the vigilante wants to achieve. However, killing innocents or police officers will still attract police attention. Marvel's Frank Castle aka The Punisher is an example of a vigilante.
The following I came up on my own
Cop
You rule the streets, you can either take the good cop side, or the bad cop side. If your a good cop, you stand by the law and make sure all citizens are doing the right thing. You punish all troublesome criminals. Or you can be the crooked cop, who takes innocent peoples lives and ruins them by framing them for murder. A corrupt cop also does whatever they choose, however the good cops could possibly get you taken off the force thus losing all your power. You get all your weapons, and cash from the government, which means you have everything you need at the local Police Department.
Civilian
The populous of a town, the Civilian is usually just average joes trying to make their way through life in San Andreas (and finding hard with all the crime).
